The Dining Room at Park Hyatt Siem Reap gave us a dinner that moved between Khmer flavors, carefully cooked seafood, and an unexpected cultural performance in the courtyard. I came back after our Park Hyatt Siem Reap afternoon tea hoping for another good meal. The watermelon and dried fish salad made me want to recreate it at home; the seafood platter kept Ian and me at the table much longer. Here is what we ate, what I would order again, and what to check before booking today.
Is The Dining Room at Park Hyatt Siem Reap worth booking?
Best for: A leisurely hotel dinner with a choice of indoor seating or a courtyard experience, subject to availability.

The courtyard was the first reason we wanted to return. By evening, the banyan tree, reflecting water, and torchlight had a different presence from the daytime setting we knew. We chose the outdoor atmosphere; the indoor Dining Room, with its white and dark wood tones and comfortable seating, was another appealing option.
During our meal, we watched Apsara dancers and a Bokator martial arts demonstration accompanied by music. That surprise became part of the evening’s character. Hyatt now presents an Apsara Dinner separately from The Dining Room, so ask about performance dates, seating, and the booking arrangement if the show matters to you.
Our meal moved from a duck starter to a watermelon salad and a large seafood platter. The menu has since changed, so these dishes describe the dinner we actually had, not a promise of what is served now. What has stayed with me is the contrast between the simple salad and the more elaborate seafood course.
The salad paired cubes of sweet watermelon with salty dried fish flakes and mint. The mint tied those flavors together and kept the dish fresh. I promised myself I would try making it at home after a few bites, which is a fair measure of how much I liked it.
The Seafood Seduction platter was our main event. Ian and I normally end up choosing a favorite piece each, but this time the pleasure was moving among the different preparations. The grilled Mekong lobster had a firm bite and came in its shell; the Norwegian salmon had a crust with a tender center, and the pan-roasted Alaskan scallops carried a little Kampot pepper.
The calamari had a Cambodian-spiced stuffing with straw mushrooms, lemongrass, and kaffir lime. Steamed mussels in white wine took the plate in a more European direction, while marinated prawns brought curry paste and coconut milk. Each had its own seasoning, and the seafood was cooked with care.
Two sides and three sauces came with our platter. We chose glazed young carrots and mashed potatoes, and also enjoyed the stir-fried morning glory served beneath the mussels. Béarnaise, pan gravy, and tamarind sauce each worked differently with the seafood. Once the platter was finished, freshly baked bread took care of the remaining sauces.
A mojito over crushed ice accompanied the meal. The details around the table, including the pink lotus flowers, made the setting pleasant without distracting from the food.
I would return for the salad and the seafood, and I would ask for a courtyard table if the evening allowed it. A few dishes needed an extra pinch of salt for our taste, though the cooking of the fish and shellfish was excellent and the service was warm. The performances were a welcome surprise on our visit. For anyone planning a similar evening today, the sensible step is to reserve the dinner and the cultural experience explicitly, since Hyatt now lists them separately.
